The name derives from the Old French word paelle for pan.  It originated in the fields of a region called Valencia on the eastern coast of Spain. With a tradition that dates back well over a century, the Valencian rice dish Paella is revered for its fragrant balance of saffron, olive oil, and fresh meats or veggies.
